Recipe!

My camera battery is dead, or else I would post a picture with this, but I had to post this recipe right away because it was SO EASY, AMAZINGLY good, and only 262 calories and 7 grams of fat per serving!

(I halved it, since I was cooking for one)

Honey Pecan Chicken

1 C Wheat Chex cereal crumbs
1/3 C finely chopped pecans
2 Tbsp honey
2 Tbsp low-sodium soy sauce
6 skinless, boneless chicken breasts
Salt and pepper to taste

Preheat the oven to 425

Cover a baking sheet with foil, and spray with nonstick cooking spray. On a plate or on waxed paper, combine the cereal crumbs and pecans. In a bowl, mix together the honey and soy sauce.

Season the chicken with salt and pepper. Dip both sides of the chicken breast into the honey mixture; then roll in the pecan mixture to coat. Arrange the chicken on the pan. Bake for 12 to 15 minutes on each side, or until the chicken is done. Serve.
